- Muddle in a shaker 1/2 kiwi, 45 grams poached rhubarb, 12.5ml gomme syrup and 25ml Kwai feh
- Fill shaker with ice and add 25ml koko Kanu rum and 25ml pineapple juice
- Shake and double strain into coupette glass
- Top with champagne and garnish with a kiwi wheel and rhubarb segment
