NEW CLUB INCLUSION – Kaspar’s Seafood Bar and Grill at The Savoy, London
Two and a half years after London’s Savoy hotel re-opened following a £220m facelift, the property is today replacing its fine-dining restaurant with a more relaxed dining space.
Kaspar’s Seafood Bar and Grill opens in the space previously occupied by the French-focused River Room restaurant. Enjoying panoramic views of the River Thames, the restaurant is dominated by a seafood bar where breakfast items displayed in the morning will be replaced later in the day with an impressive selection of shellfish, cured and smoked fish.
The restaurant intends to encourage a more relaxed form of eating with many of the dishes available as starters or main courses. Starters include smoked brown shrimp & eel cocktail (£14), celery and pecorino soup (£7) and roasted ox tail consommé (£9), while mains will offer smoked salmon sausage, apple sauerkraut and horseradish sauce (£18), Dover sole with brown butter caper sauce (£34) and lobster club sandwich with chips (£25). Desserts include vanilla rice pudding (£8), apple tarte tatin (£8) and peach Melba (£8), a dish originally invented at the Savoy 120 years ago by Auguste Escoffier for Australian soprano Nellie Melba.
Head chef is Canadian born James Pare, who began his career as chef de partie at Fairmont Chateau Whistler, Canada, and joined the Savoy three years ago.
The art deco inspired restaurant is designed by Robert Angell Design Studio, which has previously worked on interiors at Lime Wood, the Connaught and the Wolseley. Its intention has been to replace the hushed hotel dining room of old with a more stylish and comfortable design which will help to create a lively ambience.
Kaspar’s is named after the Savoy’s cat, a 3ft high sculpture which accompanies diners of 13 to stave off bad luck.
Kiaran MacDonald, the Savoy’s general manager, said: “Not only in its name does Kaspar’s keep alive the wonderful history that this four legged friend brought to the hotel almost 100 years ago, but as an informal, yet chic brasserie style restaurant it will also meet the demands of today’s regular diners.
