Chef News – Michael Wignall pops up at The Rib Room
Two-Michelin-starred chef and Design Restaurant favourite, Michael Wignall is to run a London pop-up restaurant at the Rib Room at the Jumeirah Carlton Tower hotel.
From 15 to 18 May, Wignall, whose Latymer restaurant at Pennyhill Park in Surrey also holds five AA rosettes, will serve a seven-course tasting menu at dinner.
Wignall will be assisted by the Rib Room’s head chef, Ian Rudge. Dishes will include torched Cartmel smoked salmon with consommé, chargrilled cucumber and leek; Portland crab, chicory and horseradish salad; and Anjou squab pastrami with turnip, black rice, barbecued sweet corn and Hereford snail risotto.
The menu will be priced at £80, with a wine flight created by sommelier Louise Gordon available for an additional £65 per person.
Commenting on the pop-up, Wignall said: “I am really looking forward to working at the award-winning Rib Room alongside their well-established team.
“This is an excellent opportunity to showcase my unique style of cooking to the London audience and those who might not otherwise experience it at Michael Wignall at the Latymer.”
Wignall joined Pennyhill Park in 2008 after a five-year stint as executive chef at the Devonshire Arms Hotel in Yorkshire, where he held a Michelin star for four years.
