Minster Mill – Andrew Brownsword Hotels’ latest luxury unveiling
Beyond the dreaming spires of Oxford and the majesty of Blenheim Palace, a new bastion of elegantly preserved history has re-opened. This place is Minster Mill – the latest beautiful hotel, restaurant and spa in the Andrew Brownsword Hotel collection which includes the likes of Gidleigh Park, Amberley Castle, Buckland Manor and Bath Priory.
The new hotel opened March 2019 in the pretty Oxfordshire village of Minster Lovell in the heart of the Cotswolds. Minster Mill, set within a 20th century mill and on the foundations of a mill documented in the Doomsday Book of 1086, is on the pretty banks of the River Windrush in 65 acres of glorious gardens, wildflower meadows and peaceful woodland.
The opening follows a major refurbishment programme totalling an investment of over £4.5 million, with owners Andrew and Christina Brownsword working alongside architect Simon Morray-Jones.
Featuring stylish, modern interiors, no two of the 38 individual designed Scandi-style bedrooms are the same – all uniquely dressed and fitted, and complemented with L’Occitane products in the en-suite bathrooms.
The brand new restaurant is at the front of the property, serving seasonal contemporary and traditional British food.
The kitchen is headed up by 2017 Masterchef semi-finalist Tom Moody (who was previously at sister hotel, The Slaughters Manor House), features dishes using best regional and seasonal ingredients such as Whipped Oxford blue cheese with Cox apple, balsamic and smoked onion as a starter and Buttered-poached cod, creamed leeks, roasted hazlenut and chervil veloute. Both are available on the current set lunch menu where two-courses are £24.50 and three courses £30. Also available is an a la carte menu, and a full afternoon tea menu is £25 pp.
With vaulted ceilings and original oak beams, the Minster Mill restaurant has a classic look with easy-going ambience complemented by the Mill Bar, set in a high gallery overlooking the restaurant.
As a perfect escape, The Garden Spa offers soothing ESPA treatments with three treatment rooms, alongside an indoor heated plunge pool, poolside rock sauna, aroma steam room, ice fountain and tropical rain forest showers.
Rates for staying at Minster Mill start from £150 per night, based on two sharing on a B&B basis. See launch offers available until end of May 2019 here. Of course, the restaurant is open to residents and non-residents alike.
