BiBi, a South Asian term meaning ‘lady of the house,’ serves as the inspiration for Chef Chet Sharma’s award-winning restaurant in London. The name, derived from its colloquial Urdu meaning ‘grandma,’ reflects his admiration for his grandmothers—one a stickler for ingredients and process, the other adaptable and inventive.
BiBi blends traditional flavours with Chef Chet’s creative and technical expertise. The menus showcase years of research, emphasizing traceability and ethics in sourcing. Fish are dayboat-landed from British waters, cheese is sourced directly from Somerset, buffalo milk comes from Lancashire, and hand-dived scallops are from Devon. Yorkshire lamb, foraging on natural diets, results in smaller sheep with herbaceous, dark meat.
From the Indian subcontinent, rice comes from non-hybrid, heritage varietals, lower in starch and rich in protein, minerals, and vitamins. Pesticide-free spices are single-sourced, and Paigambari wheat is used for rotis, just as it was on Chet’s family farm, noted for its low glycemic index and high nutritional value.
